Project summary:
Commission Regulation (EU) 2023/2108 of 6 October 2023 introduces changes to the added and residual doses of nitrifying salts that companies must comply with from 10 October 2025. Due to the importance of this additive in the production of cured meat products, adapting to this legislation in such a short period of time is a major challenge for meat companies, as the modifications carried out to comply with the legislation do not negatively affect the sensory properties of the product, its shelf life or its food safety.
Therefore, the main objective of the project is to adapt the formulations and/or processes of cured meat products from Catalan companies so that they can comply with the new regulations regarding the use of nitrites and nitrates in Commission Regulation (EU) 2023/2108 of 6 October 2023, without affecting their sensory characteristics or shelf life. Meeting this objective will help companies position themselves in the market.
